Oyster mushrooms are our best seller, and the reason is not subtle: they cook in minutes, they do not need peeling, and they take on whatever you cook them with. Sold by the kilo.
Flavour and texture
Fresh, an oyster mushroom is mild and faintly sweet, with a soft, spongy texture that soaks up sauce rather than sitting in it. It is the closest thing most people find to a meaty texture without it being meat, which is why it works so well as the filling in a meat-free meal.
The cap fans out from a short, firm stem, so it tears easily along natural fibres. Tearing rather than slicing keeps the texture better: a knife compacts the flesh and the thin edges tear as they cook.
How to cook them
- Tear by hand and sauté hard with onions and garlic until the edges catch. Give them space in the pan or they steam instead of browning.
- Add to stews and soups in the last 5 minutes, so they stay springy.
- Batter and fry as a crunchy snack. The gills hold the batter and the stem stays juicy.
- Roast on a very hot tray at 220C. High heat is what browns them; a moderate oven leaves them pale and wet.
How to store them
Fresh oyster mushrooms keep in the fridge for three to five days in a paper bag. They give off a lot of water, so keep them loose rather than sealed, and cook any that have darkened before they turn.
Oysters are the most perishable thing we sell, so a paper bag in the fridge is not an excuse to keep them for a month. Cook them early. We harvest Monday to Saturday, and we cut when the mushrooms are ready rather than to a fixed calendar.

Three to five days in the fridge, in a paper bag. At room temperature they go soft within a day, so keep them cold and cook them early.
